#AllCoopedUp with Catherine McCord, Founder of One Potato and Weelicious

Catherine McCord is the founder of Weelicious, and online resource and cookbook for parents full of healthy, nutritious recipes for the whole family, The Smoothie Project, and One Potato Box. Catherine lives in Los Angeles with her husband and three children and is good friend of the Jenna Cooper Team. In fact, in Caroline’s previous life doing interiors, she worked with Lauren Soloff Interiors in re-decorating Catherine's beautiful Los Feliz home. What’s your profession, and what does your day-to-day work experience look like now?

I’m the co-founder of One Potato (an organic family friendly smoothie and dinner company) and founder of Weelicious. Right now I’m grateful to be home with my kids and working from home as we safely deliver food to families in need across 8 states.

Are there objects or spaces in your house that you are newly appreciating? Or are there objects and spaces you have come to loathe?

I’m so grateful for my home office. I re-did the space a few weeks ago to make it even more efficient and even created a sign on the door with a red and green stop sign so my kids know when I’m on work calls or need time to focus.

Describe your at-home quarantine uniform.

My goal is to put on jeans and a cute sweater or sweatshirt. If I stay in my sweats all day, I don’t feel as motivated to get everything done.

Who are you quarantining with? Do you feel the need to “get away”? How do you make it happen?

I’m with my husband and 3 kids, ranging in age from 4-13 years old. There’s no getting away right now. I’m just leaning into all of it. I am Zoom-ing with my girlfriends once a week which feels like a vacation.

What’s the last thing you purchased online? Regret or obsessed?

Birthday presents for my daughter, including this bean bag chair which has changed her life (so she says). She sits in it to read all day.

Tell us the best shows, podcasts, or books you’re loving right now.

3 kids + work + cooking + cleaning + homeschooling + social distancing = no free time!

Do you have any new quarantine activities or rituals?

Our family picks a smoothie every day from the Smoothie Project Cookbook to make at breakfast. It keeps us filled with nutritious immunity-boosting foods.

What is your favorite quarantine snack? What restaurants are you ordering takeout from?

We’ve been making these Flourless Pumpkin Chocolate Chip Muffins nonstop. They’re so good and made with pantry and refrigerator ingredients. For take out: All Time once a week has been a lifesaver! I dream of their farmers market focused food.

What is the one item you’re glad you stocked up on? What do you wish you’d stocked up on?

I stocked up on jarred and canned tomatoes and beans from the Hollywood Farmers Market. I wish I had stocked up on farro. It’s out everywhere and online.

What is your creative outlet and how are you making space for it?

Playing with my kids. We’ve been doing a lot of arts and crafts projects and cooking together. We have a weekly IG Live series cooking together which is fun connecting with others online.

Describe your biggest quarantine indulgence.

Going to the bathroom alone. Real talk.

If you have kids, how are you maintaining some kind of schedule for them?

My husband and I wrote out a schedule we’re trying to stick to for wakeup, work, school, art/creativity time, dinner, bed time, and more.

What are you doing for exercise?

We have 25 stairs leading from our driveway to our house. I do them for 30-45 minutes a day while on conference calls or listening to a podcast.

Are you sharing recipes with friends?

Always!

What’s been the biggest challenge for you throughout this?

Getting the amount of work done that I need.

When this is over I cannot wait to ________.

Go on a date with my husband!
